Grilled Tenderloin Fillet with Cream Cheese Garlic Mashed Potatoes and Sauteed Carrots


   Well, the time Aaron and I have together is soon coming to an end. He leaves for basic training on Monday and I can hardly believe how fast the time has gone. We are cherishing every single moment we have together, including making this next meal. It's nothing fancy by any means, but it certainly was amazingly delicious! Aaron definitely knows how to grill a steak. It was perfect!

Here's how to prepare the Fillets:
  • Use as many fillets as you want; we used two and a half. (That's what came in the package)
  • Just season with salt and pepper on each side
  • Grill as desired


Here's how to prepare the Potatoes:
  • Peel, wash and cut into quarters as many potatoes as you think you will need for the amount of people. (We used about a quarter of a 10 lb. bag)
  • Boil potatoes in salt water until they almost fall apart when poked with a fork.
  • Drain and mash well.
  • Add 1/4 cup of solid butter, 3/4 pkg. cream cheese, and milk until desired consistency. 
  • Add 4 cloves of garlic and mash into potatoes. Garlic salt can be added if the flavor is too bland.
 Here's how to prepare the Carrots:

  • First grate outside skin off as many carrots as you would like to use.
  • Then, cut carrots into about 1/8 in. thick medallions.
  • Boil carrots in water for about 2-2 1/2 minutes. (Helps speed up the sauteing process)
  • Then, drain the water and add butter, salt and dried parsley as desired and saute over medium heat until carrots are soft. YUMMY!
This meal is probably one of my favorites of all time. Everything paired really well together and it was very tasty with a glass of sparkling white grape juice. 

As Aaron and I count down the days to his departure, we try to keep in mind how blessed we are by God's grace and love. Even though we will be separated for a while, God's grace stands forever and will never be separated from us. Aaron, I look forward to being able to make this meal with you again one day :) I love you.

Hawaiian Grilled Chicken with Bacon Wrapped Asparagus


    Here we go! Our first recipe we want to share. Being that it's our first recipe, we decided to prepare a dish that included an ingredient that Aaron and I love... BACON! Who doesn't like bacon right? Anyway, this meal is relatively easy to put together. We found this chicken recipe on another blog and the asparagus we found on Pinterest.

For the Hawaiian Grilled Chicken:

6 Boneless Chicken Breasts
2 cups Pineapple Juice
2 TBSP Worcestershire Sauce
2 TBSP Soy Sauce
2 TBSP Brown Sugar

Mix all the above ingredients together, except the chicken. Pour the marinade over the chicken and refrigerate for 24-36 hours. Cook chicken on the grill. Aaron butterflied the chicken breasts to allow more absorption of the marinade and faster cooking. In this case, choosing larger pieces of chicken works best, because throughout cooking, the chicken shrinks.

I made a quick Hawaiian style barbecue sauce that consisted of: Ketchup, Brown Sugar, Honey, Worcestershire Sauce, and Pineapple Juice. Just eyeball it.  

For the Asparagus:

1 Bundle Asparagus
8-10 Strips of Bacon

Wash asparagus and trim the ends. Divide the asparagus spears evenly by the number of bacon slices. Wrap bacon around bundles and place them on the grill or on a sheet pan and bake at 350 degrees, turning frequently until crispy. Aaron and I decided to bake them in the oven after they started the grill on fire.

Something about me


  Hello, my name is Tessa and this is my first time blogging. I never used to think having a blog was worth my time until I noticed how many people use them to post their favorite recipes. One of my passions is to cook and bake, so I thought I would join in on the fun by posting some recipes that I have found to enjoy and think others will enjoy as well.

  One thing that makes cooking and baking more lovable is when I get to do it with my best friend, (who happens to be my Boyfriend) Aaron. We have been together,as a couple, for two years and four months, but have known each other since we were very young. Aaron's father was the Pastor of my church which I have been attending my whole life. They moved to this church when I was about two years old and throughout the years there always seemed to be something between Aaron and I that stuck. So here we are.
  Throughout our busy lives, Aaron and I are going to post different recipes that we have made together in a matter of four weeks. At the end of those four weeks, Aaron will be leaving for Basic Training in the United States Air Force. From then on, I will continue sharing recipes and the blessings God has shown me.
