Well, the time Aaron and I have together is soon coming to an end. He leaves for basic training on Monday and I can hardly believe how fast the time has gone. We are cherishing every single moment we have together, including making this next meal. It's nothing fancy by any means, but it certainly was amazingly delicious! Aaron definitely knows how to grill a steak. It was perfect!
Here's how to prepare the Fillets:
- Use as many fillets as you want; we used two and a half. (That's what came in the package)
- Just season with salt and pepper on each side
- Grill as desired
Here's how to prepare the Potatoes:
- Peel, wash and cut into quarters as many potatoes as you think you will need for the amount of people. (We used about a quarter of a 10 lb. bag)
- Boil potatoes in salt water until they almost fall apart when poked with a fork.
- Drain and mash well.
- Add 1/4 cup of solid butter, 3/4 pkg. cream cheese, and milk until desired consistency.
- Add 4 cloves of garlic and mash into potatoes. Garlic salt can be added if the flavor is too bland.
Here's how to prepare the Carrots:
- First grate outside skin off as many carrots as you would like to use.
- Then, cut carrots into about 1/8 in. thick medallions.
- Boil carrots in water for about 2-2 1/2 minutes. (Helps speed up the sauteing process)
- Then, drain the water and add butter, salt and dried parsley as desired and saute over medium heat until carrots are soft. YUMMY!
This meal is probably one of my favorites of all time. Everything paired really well together and it was very tasty with a glass of sparkling white grape juice.
As Aaron and I count down the days to his departure, we try to keep in mind how blessed we are by God's grace and love. Even though we will be separated for a while, God's grace stands forever and will never be separated from us. Aaron, I look forward to being able to make this meal with you again one day :) I love you.
